Material, not price.

The single biggest difference between a pan you love and one you resent. Cast iron, carbon steel, stainless, and nonstick each do one job well — pick for the job, not the discount.

Weight you'll actually lift.

A pan that lives in the cabinet because it's too heavy to wash is a bad pan. Hold it one-handed, full of water, before you commit.

Handle tells you the use case.

Stay-cool handles for the stovetop, full-metal for the oven, riveted for a lifetime, welded for light duty. Don't shop across categories.

Coatings trade longevity for ease.

PTFE nonstick is effortless but wears out in 2–3 years. Seasoned cast iron and carbon steel last decades but ask for upkeep. Stainless lasts forever and forgives nothing.
